The course provides an overview of the principles of nutritional science. Subject matter includes description and function of nutrients, digestion and absorption, effects of nutrient deficiencies and toxicity, requirements, food sources, nutrient interactions, dietary guidelines, and the role of nutrition in health and disease.
It is a flexible learning course that allows you to complete the entire course at your own pace. The overall pace within each module is up to you, however, the sections should be done in sequence.
The aim of the course is to develop a basic understanding about nutrition, its impact on human health and new advances in food technology. This course covers the physiological, biochemical and social aspects of food and discusses the relationship between metabolites and human health. In addition, the curriculum focuses on advances in the most emerging area of applied science of nutraceuticals (where food is medicine). Knowledge of nutrition under extreme climatic conditions, space nutrition and sports nutrition empowers students’ knowledge and skills to use food as a powerful tool for physical, mental and social well-being.
1. The course provides a detailed insight into understanding the structure, molecular interactions and bio-mechanisms of food metabolites. 2. The curriculum has a multidisciplinary emphasis on providing a broad base of knowledge and understanding of the broader role of nutrition in maintaining health and preventing diseases. 3. It introduces students to the most advanced aspects of food and nutrition to understand space nutrition, sports nutrition, genetically modified food, functional foods, etc.
The aim of the course is to enable students to acquire knowledge about the interactions between food, the body, and health under normal and special circumstances.
To provide students with basic terminology and knowledge of the many aspects of nutrition and the functions of food in healthy living; • To ensure that students are familiar with food classification, nutrition under special circumstances and the role of special functional food; • To equip students with knowledge and understanding of modern aspects of nutritional science and food use
Successful completion of this course will enable students to: – Summarize and critically discuss/understand both fundamental and applied aspects of food science. They will be able to apply principles from various aspects of food science and related disciplines to explain the functions of specific nutrients in maintaining health, identify nutrient specific foods, and solve practical and real-world problems. . – Use current information technologies to locate and implement evidence-based guidelines and protocols and provide you with the critical thinking to take leadership roles in the fields of health, dietetics, special nutritional needs and nutritional counseling .
